Gluten and Dairy-Free Banana Pudding (No Bake)

I'm surprised I didn't think to do this recipe sooner! I'm glad it turned out well and hopefully it does for you, too. :)

 

Ingredients:

2 cups- Soy or Coconut Milk

1 can- sweetened condensed coconut milk (I used Andre Prost)

1 Packet- Vanilla Instant pudding

2 Cups- Dairy-free heavy cream (I prefer County Rock's brand)

2 teaspoons- Vanilla Extract

2 Tablespoons- Honey or Sugar

3 or 4 Bananas (Depends on your needs. Bananas should not be overly ripe.)

2 Boxes of Gluten-free vanilla wafers (I used Kinnikinnick)

 

Instructions:

1. In a big bowl, add two cups of dairy-free milk, 1 can of dairy-free sweetened condensed milk, and the packet of instant pudding.  Whisk together until ingredients are combined. Set aside in refrigerator for 5 minutes or while you work on the heavy cream mixture.

2. In a mixer, add 2 cups of dairy-free heavy cream, vanilla extract, and honey or sugar (I used honey to switch things up). Whip the mixture on medium- high speed until you have firm peaks (Do not over mix). Set aside. Take 3 or 4 bananas and cut them into 1/4 of an inch coins. Set aside.

3. Remove custard from refrigerator. Set aside 1 1/2 cup of the whip cream. Take a spatula and fold the rest of the whip cream into the custard gently.

4. Now that everything is set, grab a dish you wish to assemble the dessert (I used an 8x8 glass dish because that's what I had). For the first layer, take vanilla wafers and layer the wafers at the bottom. Then, add pudding mixture over the wafers and smooth it out until evenly distributed. Add another layer of vanilla wafers. Add a layer of bananas, then pudding mixture, then wafers, then remaining bananas. Top off the dish with remaining pudding. Overtop of that add the 1 1/2 cup of whip cream and smooth it out to finish out. This is optional, but if your vanilla wafers have a bunch of crumbs left in the package, you can sprinkle them over the dessert to finish.

 

Note: Dish can be covered and left in refrigerator until you desire to eat but can only last a few days so make sure you check.
